Identification of active compounds in red onion (Allium ascalonicum) peel extract by LC-ESI-QTOF-MS/MS and determination of its antioxidant activity

<p>Red onion is one of the foodstuffs that people in everyday life widely use, but 10% red cannot be consumed and only becomes waste, namely peel onion. Although a contains flavonol compounds from flavonoid group has potential as antioxidants. So this study was conducted to determine acts The extraction method used research maceration with 80% ethanol solvent. compound content test carried out by testing phytochemical identifying compounds, polyphenols, steroids terpenoids, saponins, alkaloids, anthocyanins, antioxidant activity, identification using LC-MS. results on qualitative showed extract contained positive flavonoids, saponins. Meanwhile, LC-MS detected flavonoids (14 compounds), polyphenols (1 compound), saponins (2 alkaloids compound). activity ethanolic obtained an average 77%, total anthocyanin 17.87 mg/L. It found natural good primary oxidation inhibition ability. it can concluded effectively antioxidant.</p>
